My Husband’s Four Week Detox – Part 2

Mark’s Detox Week Two

So it has been a week! My husband has been gloriously “detoxing” for seven days. And even though he might not admit it, he is loving it. He has more energy, is sleeping better, he is getting fitter, and even in one week he has stopped snoring.

We have more time to be together as it is on the schedule to walk/run together most afternoons.

Let’s be clear, it is not as if he is suffering and don’t let him convince you otherwise!

He gets to have Nando’s or chicken curry Mondays, one cheat meal, and delicious cheese from the Deli on the weekend. In reality he is eating as well as King Henry the Eighth! Plus plant based eating is actually sincerely delicious. If anyone has had cauliflower pad Thai rice I am sure you would agree.

Mark also would like me to clarify that he does not need to be taught to run.

He would like everyone to know that he is capable of running all on his own, he has just lacked the time and motivation to do it. Both I think are poor excuses. Successful people are often very fit, and even Donald Trump has time to exercise! Correction, he has time to exercise and to Tweet. If Donald Trump has time to exercise and to tweet than I never want to hear “I don’t have time” ever again from anyone.

Anyway, without further ado I have put up the second week. For those of you following along there are recipe links at the end including a link for the best Delis in Brisbane.

Simplicity is Key

Once again it is simple. For if it is too complicated, who can be bothered. That kind of complexity is not going to be sustainable. So, we have stuck to oatmeal, porridge or toast for breakfast with plenty of fresh fruit. Wholemeal wraps, or rolls with hummus and fresh salads for lunch or leftovers. Dinners we alternate with lentils on and a variety of other plant-based meals. Including Pea pesto pasta. Just so you know, lentils are a staple for us as Mark Loves them. They are easy for us to whip together. However if there is something that you love that you could eat a few times a week than feel free to sub that out. I know of couples who make a huge pot of vegetarian curry or lasagne and eat that for a few nights in a row.

Exercise is Mandatory

Mark is now running 3-4km every other day which we usually put into our walk. To be honest he actually is quite a good runner and surprisingly fit for someone who doesn’t exercise regularly.

Quite impressive.

My husband is such a hottie. Being super-hot in Brisbane does make for some serious underarm alarm. I think if he waxed his body like I do it would be better. He does not agree. And I could not for the life of me understand why. Ha!

Week Number two Dinner recipe links

  1. Nando’s chicken. This could not be easier. You do not need a link. Seriously. You literally need chicken (whole or pieces) Nando’s marinade, minced garlic and lemon. We buy a whole chicken. Mark cuts it up. If your too lazy to do that just get a heap of chicken pieces or chicken drumsticks. Smear it all over with Nando’s marinade, some minced garlic and a squeeze of lemon. Put it in the grill for an hour and dinner is done. Serve with salad and a side of Nando’s dipping sauce.
  2. Pea Pesto Pasta –  This is Marks favourite plant based meal. Recipe is on my free cook book from my website
  3. Ala Hodi – This is a srikankan recipe which is simply potatoes and coconut milk. It is simple and easy. This is a great recipe. Personally, I use Larich paste which is from most Indian Grocers and is absolutely moorish. In fact I suggest you put it on your list. The chicken curry paste is vegan just so you know. I serve ours with cauliflower rice as normal rice with the potatoes can be a bit too heavy. For a side dish I cut up tomatoes and red onion with some balsamic vinegar. And seriously this will be a dinner that you will cook over and over.
  4. Oil Free Eggplant curry. Eggplant curry is to die for, but usually if you eat it out it is so oily you might as well drink a cup full of ghee. So this is an oil free recipe. It’s great. I use Larich paste instead of the curry power. 1-2 heaping tablespoons. Feel free to add extra light coconut milk and tined tomatoes if you like it saucy like I do!

In  case you are following this and also want to eat deli food on Saturdays like we do here is the list of the best delis around Brisbane. We found a great one in Chermside! I love deli’s, particularly if they are owned by legitimate Italians. So loud and adorable they are.

I have discovered if you are looking for it, there is plenty, I mean plenty of delis that stock delicious cheese, olives, and all everything in between. Perfect to find the most incredible treats for my husband’s treat day on Saturday.

Just so you know. Mark is looking fit and trim. How are you feeling after seven day? We would love to hear your feedback and comments and any recipes you have tried.

Until next time,

You are richly loved and cherished.
