Connection Series – Part 5 – Lunching with the Ladies – (plus Greenie)

We ran a cooking workshop and a lunch last week. My beautiful friend generously allowed me to use her house and her kitchen, which looks like something out of a Vogue magazine. Which shouldn’t surprise me as she herself looks like she could be Heidi Klum’s sister. She is the definition of ‘Yummy Mummy’. We digress.

It was so much fun cooking healthy, mostly plant based meals in her house, using the simplest of recipes. Simple being the operative word. My desire was to use as few ingredients as possible and the least amount of cooking utensils possible. Maybe once a year (unless you are a little Nona in the countryside of Italy), one may have the energy and desire to ‘make your own pasta’, but ain’t nobody going to be doing that on a Wednesday night after a big day at work or with the kids. So until we move to Italy on that big farm, simple, fresh and easy is my motto.

After the lunch we sat down to eat together.


Connection Game

“What is changing your life right now.”

It is amazing how playing a connection game in a group of people, some of whom you have just met, seems to really connect and help hearts to go to a deeper, more intimate level. This simple question is so un-intrusive, as you can go as deep or as superficial as you want. We went around the table and answered the question, ‘What is changing your life right now.”

My answer?

Being able to run our Business with my Husband. Greenie and I have always dreamed of what it would look like to be able to work together day in and day out. Launching our business where Mark is the CEO, we spend many days together and he has a hand in every facet of the business. And you know what? Not only is working with him everything I thought it would be, it is 100 times better than I thought. Working with my best friend day in and day out has been a dream come true.

It is fascinating the other answers people give. The answers can be as deep as a new relationship, or a pending divorce, or as simple as a  book, or an app, podcast, your latest face cream. Play it at your next dinner.


The Menu

I thought I would share with you two of the recipes which I used, which were both inspired by Jessica Sepel. She wrote a cookbook/8-week plan called, “Living the Healthy Life”. These recipes were from this fabulous book. They are so easy and simple. I promise they take 10-15 minutes tops to whip up! Both recipes have similar ingredients so it can be relatively cost effective for you! Try one or both this week to practice for your next dinner party!

They are both mushroom dishes which is in honour of my husband who absolutely loves mushrooms.

Note: my measurements are not exact. So feel free to add a little more oil or more or less mushrooms. The recipe is very very forgiving. And seems to just work.


Warm Mushroom and Ricotta Salad

Serves 3-4

Ingredients

  • Olive oil or organic grass fed butter (3-4 tablespoons, maybe a little more but who is counting)
  • 4 garlic cloves crushed
  • 3-4 cups of mushrooms. (use any mushrooms. I used a mixture of oyster mushrooms, shitake mushrooms and swiss mushrooms)
  • Sprigs of thyme leaves.
  • 3-4 cups of rockets or mixed salad greens.
  • 100g of fresh full fat ricotta.

Method

  • Heat a drizzle of olive oil or organic butter in fry pan
  • Crush garlic with mortar and pestle and once it has a little colour add the mushrooms. Don’t stress if it fills your pan, they shrink.
  • Add the thyme. At this stage you may need (or want) to add a little more olive oil.
  • Cover your pan and cook for 5-10 minutes until mushrooms are cooked and smell like heaven.
  • Add the green leaves or rocket to the salad bowl. Pour the cooked mushrooms on top. Dollop the fresh full fat ricotta on top.
  • Toss a little very gently and season with some salt and pepper.
  • This dish looks fancy, smells like heaven and is so utterly delicious try not to swoon as you devour it.

Mushroom Alfredo with Zucchini Noodles

Serves four

Ingredients

  • Coconut oil (approximately 1-2 tablespoons)
  • Four large zucchinis
  • 4-6 cloves of garlic crushed
  • Handful of thyme
  • Some chilli flakes (optional)
  • 2 cups of mixed mushroom. Approximately 500g
  • 1 tin of coconut cream
  • Grated Parmesan to serve at the end if you desire. You can also use nutritional yeast instead.

Method

  • Place coconut oil in fry pan and mix crushed garlic cloves in until it is fragrant. Add the mushrooms once again and get some colour
  • Add the coconut cream and cover till it is nearly cooked
  • Add the zucchini pasta through and toss it.
  • Cover for 5 minutes to cook the zucchini a little.
  • Take off heat.
  • Season with some salt and pepper.
  • Place in a serving bowl and sprinkle some Parmesan on top.

Dessert

I made the most opulent fruit tray!

Seriously. I found dragon fruit, and different coloured grapes, juicy red watermelon, passion fruit, and these Moorish organic strawberries. Heaven.

Who are you having over this week? Don’t over think it. Invite someone over and cook a simple meal and play a connection game.

Reigning in life is deeply dependant on connection with God and each other. There is no greater way to connect then opening up your home and cooking for people.

It is where acquaintances become friends and friends become family.

As CEO, Mark has put a cap on my constant stream of ideas. He even has a firm timeline for me for my current projects so I don’t talk about new ones until the current ones are completed. This is met with complete submission and obedience from me (no it is not). Make no mistake working together is a work in progress.
