My Christmas Menu

Christmas is a time where we all get together and eat really nice Food! Right? I love to use this as an excuse to try new recipes. Bringing colourful recipes with LOTS of fresh Vegetables, salads and fruit is my favourite.


Baked Eggplant with Tahini & Pomegranate

We had baked Eggplant this week, and it was so easy that Greenie made it BY HIMSELF. It was truly one of the most delicious meals we have had in a LONG time. Add Tahini and Pomegranate, a meal fit for Oprah herself!

Note: I drizzle extra olive oil on top to serve


Watermelon and Feta Salad with Marinated Olives and preserved lemon

YUM – Yotam Ottolenghi You are my hero. For the children? Watermelon Salad Stars.

It looks so Festive too. One of the readers used a balsamic glaze instead of olive oil which I think I would like even more (I mean the children). Speaking of watermelon have you tried Watermelon and strawberry Granita?  I could live on it….


Macadamia, mango and coconut tart.

And ‘Taste’ brings out another awesome number. As far as sweets go this is not too bad at all!


I could live on Salmon Sashimi. It is pricey, but Christmas is Special… Right? Have you tried this before? Salmon Crudo with raspberries. SWOON. Fresh and light for summer.


And to finish it off with my absolute favourite dish – Prawn and Mango Salad.

Yep, there is a theme here. Watermelon, mango and seafood. My three favourite foods.

When I was young, every year my Grandma used to make Christmas cake and love cake. She would spend hours making the Christmas cake and then proceed to cut the cake up into tiny pieces and wrap each piece individually first in baking paper than in festive Christmas wrapping. She would present it beautifully and we would eat it slowly through the year savouring every bite. So so sweet. I couldn’t spend hours making cake… as I am far too impatient. Yet I found this recipe for an Ultra Moist Christmas Cake. SUPER EASY!
